Apple pancakes

Ingredients

250 mL (1 cup) all-purpose unbleached flour
45 mL (3 tbsp.) brown sugar
2 mL (1/2 tsp.) cinnamon
1 mL (1/4 tsp.) nutmeg
1/2 mL (1/8 tsp.) salt
10 mL (2 tsp.) baking powder
190 mL (3/4 cup) Natur-a soy Original or Unsweetened
15 mL (1 tbsp.) soy flour
5 mL (1 tsp.) vanilla extract
30 mL (2 tbsp.) vegetable oil
1 apple, peeled and grated

Servings : 10

Preparation

  1. Mix brown sugar with cinnamon, nutmeg, and salt. Add all-purpose flour, soy flour, and baking soda. In a separate bowl, whisk together the Natur-a, vanilla extract and oil. Pour liquid ingredients over dry mixture and blend. Fold in apple.
  2. Pour 1/4 cup of the batter onto hot non-stick griddle or pan. Cook for about two minutes on first side, or until bubbles appear on surface. Flip and cook for another minute or until heated through.
  3. Serve topped with applesauce or maple syrup.
